J Recipe: Summer Pasta

Summer Pasta


A light and easy dish, especially if you are seeking to repurpose leftover chicken. Consider pairing with Iced Tea or, if you are age 21 or older you might consider pairing this dish with a crisp glass of Sauvignon Blanc. 





8 ounces of diced, cooked chicken

1 green squash, cubed

1 yellow squash, cubed

1 medium onion, chopped

Half a box of rotini pasta 

2 tablespoons olive oil

1 tablespoons garlic salt

1 tablespoon cracked pepper

1 tablespoon oregano 



Heat the olive oil and spices in a large skillet. Saute the onion and squash. Add chicken and simmer on low to medium heat. Prepare rotini according to the package. Drain pasta. Genty fold pasta into the contents of the skillet. Heat 2-3 minutes.


Serve with Honey Dijon.
